Khandvi: Besan and Yoghurt Rolls with Coconut
Lalkila Kitchen · Vegetarian · Snacks · Side dishes · Gujarati cooking · Pan cooking
Khandvi turns a thin besan-and-yoghurt batter into soft rolled ribbons. This Gujarati snack depends on cooking the batter enough to set, then spreading it while hot. Coconut and coriander provide a light filling here, with mustard and sesame seeds added at the end.
Ingredients
- 100g besan
- 150g sour plain yoghurt
- 2¼ cups water
- 1 teaspoon ginger-green-chilli paste
- ¼ teaspoon turmeric
- ⅔ teaspoon salt, or to taste
- 1 pinch asafoetida
- 2 tablespoons grated coconut
- 2 tablespoons chopped coriander
- 1 tablespoon oil, plus extra for trays
- 1 teaspoon mustard seeds
- 8 curry leaves, washed and dried
- 1 teaspoon chopped green chilli
- 2 teaspoons sesame seeds
Method
- Grease broad metal trays. Mix coconut and coriander separately.
- Whisk yoghurt, water, besan, paste, turmeric, salt and asafoetida until smooth.
- Cook in a broad pan over low heat, stirring continuously and scraping the base.
- When thick, spread a little on a greased plate. Cool briefly; if it rolls cleanly, spread the remaining hot batter thinly over the trays. Otherwise cook further and retest.
- Cool, scatter the coconut mixture, cut into strips and roll gently.
- Heat the oil. Crackle mustard; add curry leaves and chilli, then sesame. Spoon over the rolls.
Cooking notes
The plate test is more useful than a fixed cooking time. Arrange trays and a palette knife before heating the batter so spreading can begin promptly. If making this for someone avoiding wheat, check the asafoetida label rather than assuming the blend is wheat-free.
