Methi Thepla with Wheat, Besan and Millet Flours
Lalkila Kitchen · Vegetarian · Breakfast · Snacks · Pan cooking · Gujarat
Fresh fenugreek leaves go into the dough for these Gujarati flatbreads. The source combines wheat, besan, bajra and jowar flours with yoghurt and spices. Roll one piece at a time while the rest of the dough stays covered; an orderly work surface makes a batch much easier to handle.
Ingredients
- 1 cup tightly packed fresh fenugreek leaves, washed, drained and finely chopped
- 1 cup wholewheat flour, plus extra for rolling
- 1/4 cup besan
- 1/4 cup bajra flour
- 1/4 cup jowar flour
- 1 inch ginger, crushed
- 1/2–1 tsp crushed green chilli
- 1/2 tsp each ground cumin, ground coriander, turmeric and red chilli powder
- 3/4 tsp salt, or to taste
- 1 tbsp oil, plus oil for cooking
- 4–5 tbsp plain yoghurt, adjusted as needed
Method
- Combine flours, leaves, ginger, chilli, spices, salt and one tablespoon oil. Knead with yoghurt to a soft pliable dough, adding it gradually.
- Divide into manageable balls. Dust lightly with flour and roll thin rounds.
- Cook each on a hot tawa, turning once the surface begins to set. Brush with a little oil and turn again until cooked through with brown spots. Keep warm while cooking the remainder.
Cooking notes
The dough needs to roll without cracking or sticking heavily. Finely chopped leaves distribute better than long strands. Keep spare rolling flour separate from the measured dough ingredients so you can use it lightly. This version contains yoghurt and is labelled vegetarian. Eat freshly cooked; long unrefrigerated storage is not claimed here. Let a very hot tawa settle to a controllable heat rather than letting the outside burn before the centre cooks.
