Thai-Style Fish Cakes with Red Curry Paste and Green Beans

Lalkila Kitchen · Fish · Seafood · Snacks · Main dishes · International influenced · Pan cooking

These fish cakes use finely minced raw fish and sliced green beans, rather than the cooked-fish-and-potato mixture in our other fish-cake recipe. Red curry paste provides the seasoning. This particular version is credited to a Thai Taste recipe shared through Good Food; paste brands vary in heat and ingredients.

Ingredients

  • 450g skinless boneless haddock, cut into chunks
  • 4 spring onions, sliced
  • 1 red chilli, deseeded and chopped
  • 2 tablespoons Thai red curry paste
  • 2 tablespoons coriander leaves
  • 1 tablespoon palm sugar
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 50g fine green beans, thinly sliced
  • 1 tablespoon rice bran oil
  • Lime wedges to serve

Method

  1. Check the fish carefully for bones. Process fish, onions, chilli, curry paste, coriander, sugar, fish sauce and lime juice into a fine mince.
  2. Fold in the beans. Shape small, thin discs and refrigerate covered for 30–60 minutes.
  3. Heat oil in a nonstick frying pan. Fry in uncrowded batches, turning carefully, until golden and the centres reach 63°C/145°F.
  4. Drain briefly on kitchen paper and serve with lime wedges.

Cooking notes

Use thawed fish only after refrigerator thawing and pat it dry if wet. Thin discs cook more evenly than thick patties; use the thermometer rather than relying on browning. Fish sauce and some curry pastes contain fish or shellfish, so read both labels.
