Aloo Paratha with a Spiced Potato Filling
Lalkila Kitchen · Plant based · Vegetarian · Breakfast · Main dishes · Punjabi cooking
A soft dough and a lump-free filling make these stuffed breads easier to roll. The potato belongs inside the bread, rather than in a curry served alongside it. Prepare the filling before heating the tava, and keep the finished breads covered while cooking the rest.
Ingredients
- 2 cups wholewheat atta
- 1/2 tsp salt for dough, plus salt for filling
- 1 tbsp neutral oil for dough, plus oil for roasting
- Water as needed for a soft dough
- 3–4 medium potatoes, boiled, peeled and mashed
- 1–2 green chillies, finely chopped
- 1/4–1/2 tsp each Kashmiri chilli powder and garam masala
- 1/2–1 tsp amchur
- 1 tbsp chopped coriander leaves, optional
Method
- Knead atta, dough salt, oil and enough water into a soft dough. Cover and rest while preparing filling.
- Cool potatoes and mash out lumps. Mix with chillies, spices, salt and optional coriander.
- Divide dough into manageable balls. Roll a ball into a small disc, enclose some filling and pinch shut. Dust lightly with atta and gently roll into an even bread.
- Cook on a hot tava, turning and brushing with oil, until both sides show brown spots and the dough is cooked through. Repeat with remaining mixture.
Cooking notes
Avoid overfilling the first bread: a modest amount is easier to seal. Press the seam closed before rolling and work from the centre out with a light touch. If potato pieces remain hard or lumpy, they can break through the surface. This version uses oil throughout and includes no dairy accompaniment.
