Turkey Meatloaf with Barbecue Cannellini Beans
Lalkila Kitchen · Meat · Eggs · Main dishes · Western influenced
A free-standing turkey loaf bakes beside beans in a barbecue-tomato sauce. Cool the cooked onion mixture before combining it with raw mince and egg, then use a thermometer to check the centre of the loaf.
Ingredients
- 1 tbsp olive oil
- 1 large onion, finely chopped
- 1 garlic clove, crushed
- 2 tbsp Worcestershire sauce
- 2 tsp tomato purée for the loaf, plus 1 tbsp for beans
- 500 g turkey thigh mince
- 1 large egg, beaten
- 85 g fresh white breadcrumbs
- 2 tbsp barbecue sauce for the loaf, plus 4 tbsp for beans
- 2 x 400 g cans cooked cannellini beans
- 1–2 tbsp chopped parsley
- Salt and pepper to taste
Method
- Heat oven to 180°C (160°C fan). Soften onion in oil, add garlic, Worcestershire sauce and 2 tsp tomato purée. Cool.
- Mix with turkey, egg, breadcrumbs and seasoning. Shape a rectangular loaf in a roasting tin; spread with 2 tbsp barbecue sauce. Bake for 30 minutes.
- Drain one bean can, keeping the liquid from the other. Mix both cans with remaining tomato purée and barbecue sauce.
- Arrange beans around loaf and continue baking until the turkey centre reaches 74°C (165°F) and beans are piping hot. Finish with parsley and slice.
Cooking notes
Use a tin that leaves space around the loaf for the beans. The two cans are handled differently, so drain only one before mixing. Keep raw-meat utensils separate from serving utensils, and clean the probe after checking. The sauce quantities are divided between the loaf and its accompaniment.
