A baked casserole of potato, egg and sausage topped with melted cheddar

Egg potato and sausage casserole with cheddar and mustard

Lalkila Kitchen · Eggs · Meat · Western influenced · Contemporary cooking

Bread, potato, egg custard and cheddar make this an oven meal with a Western influence. Choose a clearly labelled fully cooked sausage that fits your household's preferences. Lalkila Kitchen includes meals like this alongside nostalgic recipes because everyday cooking abroad has room for both.

Ingredients · Method

Ingredients

  • 4 eggs
  • 1 1/2 cups milk
  • 3 bread slices, cut into cubes
  • 1 cup grated cheddar
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon ground black pepper
  • 1 cup sliced fully cooked sausage of your choice
  • 3 small potatoes, about 300 g total, thinly sliced
  • 1/4 teaspoon ground nutmeg
  • Salt to taste
  • A little butter or oil for greasing

Method

  1. Heat the oven to 180°C/350°F. Grease a baking dish with enough depth to contain the liquid without overflowing.
  2. Simmer the potato slices in water until just tender, then drain thoroughly. Toss with nutmeg and a little salt.
  3. Whisk eggs, milk, mustard powder and pepper. Stir in the cheddar, allowing for salt already present in cheese and sausage.
  4. Put the bread in the dish, add sausage and potato, then pour over the egg mixture. Press the bread down lightly so it absorbs liquid.
  5. Bake until the custard is set and the centre reaches 74°C/165°F. If the top browns early, cover loosely with foil. Check the centre rather than relying on surface colour.

Cooking notes

Contains eggs, dairy, wheat and mustard; sausage ingredients vary. Fully cooked sausage is specified to remove uncertainty about raw meat. This adaptation par cooks the potato so it does not stay firm under a finished custard.
