Baked Pears with Honey, Cornflakes and Almonds

Lalkila Kitchen · Vegetarian · Desserts · Western influenced

Halved pears become a warm dessert under a small cornflake-and-almond topping. The fruit starts baking before the crunch is added, so it can soften without requiring the flakes to spend the whole time in the oven. Choose ripe pears that still hold together when cut.

Ingredients

  • 4 ripe pears
  • 20 g butter, divided
  • 1/2 tsp mixed spice
  • 2 tbsp honey
  • 50 g cornflakes
  • 25 g toasted flaked almonds

Method

  1. Heat oven to 200°C, or 180°C fan. Halve and core pears; put cut-side up in a shallow baking dish. Dot with half the butter and sprinkle with spice.
  2. Bake until beginning to soften. Melt remaining butter with honey and toss with cornflakes and almonds.
  3. Spoon topping over pears. Return to oven until fruit is tender and flakes golden. Let cool slightly before serving warm.

Cooking notes

Scoop out the seeds and fibrous centre with a teaspoon. Check the topping while it bakes because already-toasted almonds can darken quickly. The butter measure is an editorial choice replacing an unspecified knob, not a measured conversion of it. This version is served on its own, so ice cream and other garnishes are absent from both list and illustration.

Source and adaptation

Adapted from the Good Food team’s Honey nut crunch pears. Original recipe.
