A shortcrust shell, broccoli and an egg-and-cream filling make this a substantial tart for lunch or a shared table. A thin layer of onion chutney adds sweetness underneath the cheese. This is part of Lalkila Kitchen's contemporary cooking collection, alongside the regional recipes families also enjoy.
Ingredients
- 320g ready-rolled shortcrust pastry
- 200g long-stemmed broccoli
- 3 medium eggs
- 200ml double cream
- 1 teaspoon wholegrain mustard
- 1 large handful chopped chives
- 4 tablespoons caramelised onion chutney
- 125g vegetarian cheddar
- Salt and pepper
Method
- Heat oven to 200°C/180°C fan with a baking sheet inside. Line a 22cm tart tin with pastry; leave a small rim and prick the base.
- Line with parchment and baking weights. Bake 15 minutes; remove weights and paper, then bake 5 minutes.
- Simmer broccoli for 5 minutes. Cool under running water and dry thoroughly.
- Whisk eggs, cream, mustard, chives and seasoning. Reduce oven to 180°C/160°C fan.
- Spread chutney inside the case. Add 100g cubed cheese, broccoli and custard; grate remaining cheese on top.
- Bake 35–40 minutes, until fully set and the centre reaches 71°C/160°F. Rest in the tin before cutting.
Cooking notes
Check that both cheese and pastry suit a vegetarian diet. Drying the broccoli prevents excess water entering the custard. Handle the hot baking sheet with oven gloves. Refrigerate leftovers promptly rather than leaving the egg-and-dairy tart on a buffet for hours.
