Chicken Fricassée with Cider, Bacon and Asparagus

Lalkila Kitchen · Chicken · Pork · Meat · Main dishes · Contemporary cooking · Western influenced

Chicken breasts, new potatoes and asparagus come together in a cider sauce thickened with a little cornflour. Smoked bacon is part of this version, so both chicken and pork are labelled clearly. It also contains alcoholic cider; the cooking method is not a promise that the finished sauce is alcohol-free.

Ingredients

  • 1 tablespoon groundnut oil
  • 4 rashers smoked back bacon, chopped
  • 6 skinless chicken breasts
  • 700g new potatoes, thickly sliced
  • 250g asparagus, trimmed and sliced
  • 225ml dry alcoholic cider
  • 1 tablespoon cornflour mixed with a little cold water
  • 250ml unsweetened soya cooking cream
  • 2 tablespoons chopped parsley
  • Salt and pepper

Method

  1. Fry bacon in the oil until golden; lift out. Brown chicken on both sides in the same pan, in batches if necessary.
  2. Boil potatoes until tender, about 10 minutes. Steam asparagus separately until tender; drain both.
  3. Add cider to the chicken pan and bring to a boil. Return bacon, lower heat and simmer until chicken reaches 74°C/165°F throughout.
  4. Stir in cornflour slurry and simmer until thickened. Add soya cream and seasoning; heat through.
  5. Fold in potatoes and asparagus. Scatter parsley and serve.

Cooking notes

Use a cooking cream intended for savoury sauces, not sweetened soya milk. Check its allergen label. Searing colours the chicken but does not finish cooking it. Keep raw-chicken utensils separate from the cooked vegetables and do not wash raw chicken.

Source and adaptation

Adapted from the Good Food team, Good Food, Chicken fricassée with new potatoes & asparagus. Original recipe.

Replaces a dated branded soya cream with an unsweetened soya cooking cream of the same volume. Retains cider and pork bacon, explicitly labelled, and adds poultry thermometer guidance. No alcohol-free claim.

This is an editorial adaptation, not kitchen-tested by Lalkila. FoodSafety.gov cooking temperatures and safe food handling provide the safety references. The featured image is a generated illustration of this recipe.
