Bread poha with peas tomato and curry leaves

Lalkila Kitchen · Vegetarian · Breakfast · Contemporary cooking

Bread can take the place of flattened rice in this practical breakfast adaptation from Lalkila's archive. Mustard seeds, curry leaves, onion and tomato give the bread cubes a savoury coating. It is an option for the days when sliced bread is already in the kitchen.

Ingredients

  • 3 slices bread, cut into cubes
  • 1 green chilli, chopped
  • 1 onion, chopped
  • 1 tomato, chopped
  • 2 tablespoons peas
  • 1 teaspoon mustard seeds
  • 1 sprig curry leaves
  • 1/2 teaspoon lemon juice
  • 3 tablespoons oil
  • 1/2 cup water
  • Salt and red chilli powder to taste
  • 1/2 boiled potato, chopped, optional

Method

  1. Heat the oil in a pan. Add the mustard seeds and let them begin to pop, then add the curry leaves carefully.
  2. Add the onion, tomato, green chilli and peas. Cook until the vegetables soften. Add the optional boiled potato if using.
  3. Add the water, salt and red chilli powder. Simmer until the peas are cooked and the water has evaporated.
  4. Add the bread cubes and gently toss to coat them in the vegetable mixture. Heat through, add the lemon juice and serve.

Cooking notes

Add the bread after the free water has evaporated so it does not become a paste. Bread ingredients vary; choose a suitable loaf if cooking without dairy or eggs.
