Very ripe bananas soften a butter-based loaf finished with a simple icing drizzle and dried banana chips.

Ingredients

  • 140g softened butter, plus tin greasing
  • 140g caster sugar
  • 2 large eggs, beaten
  • 140g self-raising flour
  • 1 tsp baking powder
  • 2 very ripe bananas, mashed
  • 50g icing sugar
  • 2–3 tsp water
  • Handful dried banana chips

Method

  1. Heat oven to 180°C/160°C fan. Grease and line a 2lb loaf tin.
  2. Beat butter and caster sugar until light. Gradually mix in eggs with a little flour.
  3. Fold in remaining flour, baking powder and banana. Fill the tin.
  4. Bake for around 50 minutes, checking from 30–40 minutes, until a skewer emerges clean. Cool briefly in the tin, then on a rack.
  5. Once cool, mix icing sugar with water. Drizzle over the loaf and add banana chips.

Cooking notes

Tin shape affects baking. Do not taste raw batter or cover the warm loaf in icing.
