Ragi, Bajra and Jowar Flour: Start with the Grain Name

Three names, different grains

The Indian Institute of Millets Research language guide identifies ragi as finger millet, bajra as pearl millet and jowar as sorghum. Regional names vary, so the grain identity is a useful bridge between a familiar home name and a label encountered abroad.

Write both the name you use and the grain's English name on your shopping list. Check the ingredient statement too: a packet carrying a millet name might be a single-grain flour, a blend or a prepared mix. Those are different starting points for cooking.

Do not substitute by the word flour alone

Choose a recipe designed for the flour you have, especially for a first attempt. A roti method, a cooked porridge and a baked loaf ask different things of a flour. Follow the recipe's water additions and handling instructions instead of assuming a wheat-flour method will behave the same.

If using a blend, record the exact product and its ingredients when you write down the result. A successful dish made with a wheat-and-millet mix does not establish that the same quantities will work with a pure millet flour. Change one ingredient at a time when adapting a favourite recipe.

Make the label do the work

Check whether the product is flour, whole grain, semolina-like meal or an instant preparation. Look for its storage instructions and buy an amount you expect to use. Keep the label when decanting so another household member can identify what is in the jar.

If avoiding wheat or another ingredient for medical reasons, rely on the full label and relevant allergen information, not the front-of-pack grain name. This guide explains ingredient identity rather than promising a health outcome or certifying a product as suitable for a particular diet.
