Ingredients
- 1 kg pork, cut into curry-sized pieces
- 3 tablespoons chilli powder
- 1 tablespoon coriander powder
- 1/2 teaspoon black pepper powder
- 1/2 teaspoon turmeric powder
- 1/2 cup oil
- 1 teaspoon mustard seeds
- 1/4 cup thinly sliced onion
- 1 tablespoon vinegar
- 1/2 cup thick coconut milk
- Salt to taste
- Water as needed to make the spice paste and cook the pork
Method
- Mix the chilli, coriander, pepper and turmeric powders with a little water to make a paste.
- Heat the oil in a heavy pan. Add the mustard seeds and, when they begin to pop, add the onion. Saute until light brown.
- Add the spice paste and fry gently, stirring to prevent burning. Add the pork and saute to coat it in the masala.
- Add water for a simmering gravy, then the vinegar and salt. Cover and simmer until the pork is thoroughly cooked and tender, stirring and adding water as needed. Use a food thermometer to check doneness; colour and oil separation alone are not sufficient.
- Add the thick coconut milk and allow the curry to simmer gently. Remove from the heat and serve hot with rice or roti.
Cooking notes
The original quantity of chilli powder makes this a strongly spiced preparation; choose the chilli variety to suit your household. For intact pork cuts, FoodSafety.gov gives 145°F or 63°C with a three-minute rest as the minimum; a simmered curry will generally need longer cooking for tenderness.
